Mini Pizzas
Pizza! Really, who doesn’t like pizza? Deep dish, thin crust, hand tossed. And all the choices for toppings! According to “Your Guide to Pizza” most kids list pizza as their favorite food when asked. Here are a few more bits of pizza trivia. PIZZAS
• Pepperoni is American’s favorite topping, with over 36% of all orders featuring this meat topping.
• More pizza is consumed during Super Bowl week than any other week of the year.
• Pizzerias comprise almost eight percent of all U.S. restaurants.
Since October is National Pizza Month and children enjoy pizza, I thought it only fitting to celebrate with a kid-friendly recipe. My mom would make these little treats with my siblings and me when we were young. Miniature pizzas are fun for kids and delicious for everyone!
Mini Pizzas
¼ C ketchup
1 tsp. Italian seasoning
½ tsp. minced garlic
24 crackers (Ritz work well)
24 1-inch squares of sliced mozzarella cheese
24 slices of pepperoni
Preheat oven to 325 degrees. Mix together ketchup, seasonings, and garlic. Spread a small amount of the ketchup mixture on the cracker. Top with a slice of pepperoni, then a slice of cheese. Place on baking sheet. Bake for 8-10 minutes or until cheese melts. Cool slightly before serving.
Boun appetito!
TIP: I use parchment paper on the baking sheet for easy clean up. Baked on cheese can be tough to clean up!
