Connecting in the Kitchen
What do your grandchildren expect to eat when they visit? Is there a treat awaiting them when they arrive? Connecting with kids in the kitchen is fun for everyone. Special treats create connections with children and will be remembered fondly for a long time.
Grandma B always makes burritos that are tasty and easy to heat for a special treat. Her recipe came from a friend who did volunteer work in a Latino community. She added her own twist to the recipe and it has been a family favorite for years. Even the college-age grandkids know there will be burritos in the freezer, ready to heat and eat!
Grandma B’s Delicious Burritos
1 1/2 pounds ground beef
1 onion, diced
3 potatoes, skin on, finely chopped
2 cans chopped chilies, undrained.
1/2 to 1/3 can refried beans.
salsa
cheddar cheese
20 flour tortillas
Brown 1 ½ pound ground beef, drain. Add potatoes, chilies, and refried beans to the ground beef and onions. Add small amount of water, your favorite salsa to taste. Add hot sauce if your grandchildren like spicy food. Cook mixture until potatoes are soft and there is less liquid.
In an electric fry pan or skillet, quickly heat a flour tortilla to soften. Place on a cutting board and add 1 large tablespoon mixture. Top with cheddar cheese and fold burrito (top down, fold in both sides, bringing up bottom to completely fold). Cool. Freeze individually.
To serve, wrap each frozen burrito in a paper towel and heat 2 to 3 minutes in the microwave. Serve with salsa and sour cream.
