Thankful Hearts with Thanksgiving Fare

Thanksgiving fare…turkey, dressing, mashed potatoes, gravy, green bean casserole, sweet potatoes, fruit salad, and more. And then there are the CRANBERRIES. The burst of color and the tangy sweetness adds to the festive meal. Cranberries are a favorite at our house both in sauce and added to other dishes. The boys like them so much I now toss a handful of Cransins into the turkey dressing!

Here’s the recipe I’ve made for a number of years with the kids. I hope you enjoy it too!

Orange Cranberry Sauce
16 oz. bag fresh cranberries
1 C water
1 C orange juice, with pulp
1 C granulated sugar
zest of 1 orange

Throughly rinse cranberries, removing any soft fruit. Place cranberries in kettle. Pour in water and orange juice. Stir in sugar and orange zest. Cover, simmer on low, stirring occasionally for 20-25 minutes. Cranberries will pop as they cook. Use a potato masher to crush any whole berries. Cool sauce on countertop before transferring to a serving dish. Sauce will thicken as it cools. Great in a sandwich with leftover turkey too!
