After School Snacks

Are your kids really hungry after school? Mine are!

“What’s for dinner?” is generally the first question posed as they come in the door and descend on the kitchen for a snack. Cheese and crackers, sliced fruit, and veggies with dip are at the top of the snack list. But the all time favorite is what was dubbed “Mommy Bars” many years ago when the boys were little. I hope your kids like the bars as much as mine still do!

Mommy Bars

1 C unsalted butter, somewhat soft
1½ C sugar
2 eggs
2 tsp. vanilla
2½ C flour
1 tsp. salt
1 tsp. baking soda
1½ C chocolate chips
1 C chopped walnuts (optional)

Preheat oven to 375 degrees. Mix butter and sugar in mixer until combined. Add eggs and vanilla. Combine flour, salt, and baking soda. Add to butter mixture. Stir in chocolate chips and nuts. Spread in a 9 x 13 baking pan. Bake for 18-20 minutes at 375 degrees. Cool and cut into bars.

Try these combinations to make yummy variations.
• chocolate chips and peanut butter chips (½ C each)
• white and dark chocolate chips (½ C each)
• coconut flakes and dark chocolate chips (½ C each)
• 1 C M&M’s TM
• 1 C Reese’s PiecesTM

I think what makes this treat special is love. The smell that fills the house isn’t bad either! And it’s always nice to come home to warm bars and cold milk, especially before hitting the books.
